Summer is a time for get-togethers, cookouts, and dinner parties. In my opinion no party is complete without a cheese plate, and this shouldn’t be forgotten in the summer. While baked Brie definitely brings Fall and Winter to mind with its comforting, oozy goodness and rich aroma, it can be freshened up for Spring and Summer using Big Boss Berry Pecan Granola.

Start with a small or large wheel of Brie, ¼ cup brown sugar, and ¼ cup Berry Pecan Granola. Grab some fresh fruit while you’re at it, I chose a nectarine and raspberries because I had them on hand, but you can use more classic pairings such as apples or grapes.

Preheat your oven to 350 degrees and grab your cutting board. Take the Brie and lop off the top rind, set aside to snack on later. Place the Brie in a flat bottomed bowl, I used a ceramic dish specifically for Brie but you could use a small casserole dish as well.

 Cover the Brie with ¼ cup brown sugar; it’s alright if some spill over the sides, once you start digging into the gooey cheese it will all meld together. Bake for 25 minutes, checking occasionally and snacking on cheese rind and the fruit you’ve begun to slice.

Once you see that the brown sugar has started to melt spread on the granola. I sifted through and found as many berries and pecans as I could, this is what really freshens up this dish and gives it that uplifting summer feel. Once the ¼ cup of granola has topped off the Brie, bake it for another 5 minutes, warming it through and melting the sugar into the granola.

Immediately serve with fresh fruit and crackers or chips. It will be an unexpected but very welcome addition to any dinner party or cook out!
